Pike Caviar

In ancient times, pike caviar was considered a valuable product, costing much more than red caviar and being a royal delicacy. Properly salted, it acquires an amber color and a crumbly texture. 

Pike caviar is an excellent snack. Mixed with finely chopped green onions and sour cream, it acquires a special taste. Pike caviar is served on the table just like black caviar – in a special caviar dish with a silver spoon. In extreme cases, it is served with white bread toasts."
